Pasta is my love: Student's life // Easy and loveable recipe

Hey there! 

If you are just like me, loving pasta and quite lazy sometimes when it comes to making dinner, keep reading! I recently came up with the perfect dish when I'm craving for pasta, but also want to eat some vegetables so I don't feel bad about myself for not eating enough fruits and vegetables. Do you ever feel that way too? Leave a comment if you do or even if you don't. You can also serve this dish if you have some people coming over and you want to serve something that feels like you spend the whole day in the kitchen. I don't have a fancy name for this dish but I wish haha, I just name it the Pasta al Pesto with Zucchini and Cherry Tomato. I know it's so long, but don't worry it's so easy to make and so delicious, and it only take 20 minutes max! even less! 

For this recipe you will need, one big Zucchini, any kind of pasta you would like, I personally prefer Spaghettis for this particular dish (Spaghettis are my favorites anyway), Cherry Tomatoes, as much as you would like, just note that they will be cut in half, and pesto sauce.

While the water is heating for the pasta, and you're waiting for it to boil, wash your Zucchini and cut it in small pieces. Then you have different options to cook the zucchini. The first time I cooked this dish I steamed the Zucchinis cut in small pieces for 10 minutes. This time, because I didn't feel like using the pressure cooker, I decide to simply put the pieces in a pan with some oil (Careful! not too much) and let them cook at a medium/low heat, for around 10 minutes. You don't have to leave them cooking on a pan for 10 minutes, you decide when your zucchinis look the way you want them to look. 



Once the water is boiled, put your spaghettis in the water for 8 to 12 minutes, for mine it was recommended to leave them cooking for 8 minutes, I leave them in the boiling water for an extra minute.  
While the pastas are in the water and the zucchinis in the pan, you can start washing your cherry tomatoes and cutting them in half. I use 6 cherry tomatoes. I love cherry tomatoes and I just love the taste they had to the dish. 
When the pastas are done cooking, you can drain them, add salt and butter. Then you can add your pesto sauce, I personally put 2 tablespoons, but you decide how much you want in your dish. Once the sauce is well mixed with the pastas, you can go ahead and add the zucchinis and then the cherry tomatoes. Add salt and pepper and Tadaaaa. It's ready!
